  • 1.5 lbs Chicken Breast cut into 1-inch pieces (680g)
  • 2 tbsp Olive Oil (30ml)
  • 1 tsp Kosher Salt (6g)
  • 1 tsp Cracked Black Pepper divided (2g)
  • 1 cup Heavy Cream (240ml)
  • 4 cloves Garlic minced (20g)
  • 1/4 cup Fresh Parsley finely chopped (10g)

Equipment

  • 1 Grill Pan or Cast Iron Skillet To achieve charred marks
  • 1 Small saucepan For the garlic cream sauce

Method
 

Cook the Chicken
  1. Pat chicken dry, toss with olive oil, salt, and half the pepper.
  2. Sear in a hot grill pan for 3-5 minutes per side until dark charred marks appear.
Prepare Sauce
  1. Sauté garlic in butter, add heavy cream, and simmer until thick and opaque.
  2. Arrange chicken in a shallow dish, drizzle with sauce, and garnish with parsley and pepper.

Notes

Dry the chicken thoroughly for better charring.
Use high heat to ensure the surface glistens and stays moist.
