  • 2 6 oz (170g) fillets Cod fillets Thick-cut loins preferred
  • 1 cup (150g) Cherry tomatoes Red and ripe
  • 2 tbsp (30ml) Extra virgin olive oil Divided use
  • 1/2 cup (120ml) Heavy cream For the opaque base
  • 1/4 cup (10g) Fresh dill Finely minced
  • 1 tbsp (15ml) Lemon juice Freshly squeezed

Equipment

  • 1 Outdoor Grill or Grill Pan Ensure it is preheated for char marks.
  • 1 Small saucepan For reducing the dill sauce.

Method
 

Preparation and Grilling
  1. Pat cod fillets dry. Brush with olive oil and season with salt and cracked black pepper.
  2. Toss tomatoes in oil and grill until skins split and edges are caramelized, about 5-7 minutes.
  3. Place cod on high heat. Grill for 4 minutes per side until distinct dark char marks appear and fish is flaky.
  4. Simmer cream in a saucepan until reduced by one third. Stir in fresh dill and lemon juice until thick and ivory-colored.

Notes

Ensure the grill is very hot before adding fish to prevent sticking.
Use only fresh dill for the most vibrant color and flavor.
