Ingredients
  

Skewer Ingredients
  • 1 lb Jumbo Shrimp 450g, peeled and deveined
  • 12 oz Smoked Sausage 340g, sliced into 1/2 inch rounds
  • 2 medium Green Zucchini Sliced into rounds
  • 2 large Red Bell Peppers Cut into 1-inch chunks
  • 1/2 cup Extra Virgin Olive Oil 120ml
  • 1 tsp Dried Oregano 2g
  • 1 tsp Cracked Black Pepper 2g
  • 3 cloves Garlic Minced
  • 1 tbsp Lemon Juice 15ml, fresh

  • 1 Grill Gas or Charcoal
  • 8 Skewers Wooden (soaked) or Metal

Method
 

Preparation
  1. If using bamboo skewers, soak in water for 30 minutes. Preheat grill to medium-high heat (400°F / 200°C).
  2. Whisk olive oil, garlic, lemon juice, half the oregano, and half the pepper in a small bowl.
Assembly & Grilling
  1. Alternate shrimp, sausage, zucchini, and pepper chunks onto skewers. Brush generously with the herb oil glaze.
  2. Place skewers on the grill. Cook for 3-4 minutes per side until shrimp are pink and sausage is browned with charred edges.
  3. Remove from heat. Brush with remaining oil and sprinkle with extra oregano and cracked black pepper before serving.

Ensure even slicing of vegetables for consistent cooking.
