Ingredients
  

Skillet Ingredients
  • 1 lb Ground Turkey 93% lean (454g)
  • 1 tbsp Avocado Oil or any high-heat oil
  • 1 cup White Onion diced (150g)
  • 1 can Black Beans rinsed and drained (425g)
  • 1 cup Sweet Corn fresh, frozen, or canned (150g)
  • 1/2 cup Tomato Sauce for the taco glaze (120ml)
  • 2 tbsp Taco Seasoning Chili powder, cumin, garlic powder, salt
  • 1 cup Cheddar Cheese shredded (113g)
  • 1 cup Monterey Jack Cheese shredded (113g)
  • 1/4 cup Fresh Cilantro chopped
  • 2 whole Green Onions sliced
  • 1/2 cup Roma Tomatoes diced (75g)

Equipment

  • 1 Cast Iron Skillet 12-inch seasoned pan preferred
  • 1 Wooden spoon For crumbling turkey

Method
 

Cook the Turkey
  1. Heat oil in the cast iron skillet. Add turkey and sear without moving for 3 minutes until a brown crust forms. Add onions and sauté until translucent.
  2. Stir in the tomato sauce, taco seasoning, black beans, and corn. Simmer for 5 minutes until the sauce forms a thick reddish-brown glaze.
  3. Top with cheddar and Monterey Jack. Cover and let melt for 90 seconds until bubbly.
  4. Remove from heat and top with fresh cilantro, sliced scallions, and diced tomatoes.

Notes

Always grate your own cheese for the best melt.
Use a hot cast iron pan for the best turkey sear.
