  • 2 sheets Puff Pastry Thawed but cold (17.3 oz / 490g)
  • 1/2 lb Deli Ham Thinly sliced (225g)
  • 8 oz White Cheese White Cheddar, Swiss, or Gruyère (225g)
  • 1 large Egg For egg wash
  • 1 tsp Water To thin the egg
  • 1 tsp Poppy Seeds Black poppy seeds
  • 1 tsp Dried Parsley Flakes

  • 1 Baking Sheet Lined with parchment paper
  • 1 Pastry Brush For the egg wash

Method
 

Prep and Cut
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut each puff pastry sheet into 9 equal squares (18 squares total).
Assemble the Stacks
  1. Place 6 squares on the sheet. Top with folded ham and white cheese.
  2. Place a second square on top, adding another layer of ham and cheese.
  3. Top with the third pastry square to create a 3-layer stack.
Glaze and Bake
  1. Brush the tops and sides with egg wash. Sprinkle with poppy seeds and parsley flakes.
  2. Bake for 20-25 minutes until golden-brown and the cheese is bubbling.

Notes

Keep the pastry cold right up until baking for maximum height.
Use a pizza cutter for the cleanest edges on your pastry squares.
