  • 1/2 cup (120ml) Teriyaki Glaze Thick consistency for better coating
  • 2 slices Swiss Cheese Melted over chicken
  • 2 rings Fresh Pineapple 1/2 inch thick slices
  • 2 pieces Green Leaf Lettuce Fresh and ruffled
  • 2 tbsp Mayonnaise Thick and white
  • 2 whole Brioche Buns Toasted
  • 1/2 cup (80g) Fresh Pineapple Finely diced for salsa
  • 2 tbsp Red Onion Diced bits
  • 1 tbsp Fresh Cilantro Chopped flakes

  • 1 Meat Thermometer Ensures chicken hits 165°F

Method
 

Preparation and Grilling
  1. Combine diced pineapple, red onion, and cilantro in a bowl. Let sit for 15 minutes to allow flavors to meld.
  2. Grill chicken cutlets on medium-high heat for 5-6 minutes per side. Brush with teriyaki glaze during the last 2 minutes.
  3. Place pineapple rings on the grill until caramelized. Top chicken with Swiss cheese and melt.
  4. Smear mayo on toasted brioche buns. Layer lettuce, chicken, grilled pineapple, and a generous spoonful of pineapple salsa.

Notes

Ensure your grill is very hot before adding the chicken to get professional char marks.
Always toast your buns to prevent them from becoming soggy from the fruit juices.
