  • 2 lbs Chicken Breasts Boneless, skinless (907g)
  • 4 slices Mozzarella Cheese Thick white slices
  • 4 rings Fresh Pineapple Golden-brown when grilled
  • 1 cup Soy Sauce 240ml
  • 1 cup Brown Sugar 200g, packed
  • 1/2 cup Pineapple Juice 120ml
  • 2 tbsp Sesame Oil 30ml
  • 2 cloves Garlic Minced
  • 2 tbsp Green Onions Sliced for garnish
  • 1 tsp Sesame Seeds Toasted white seeds

Equipment

  • 1 Outdoor Grill Gas or charcoal
  • 1 Small saucepan For thickening the glaze

Method
 

Preparation
  1. Whisk soy sauce, brown sugar, pineapple juice, sesame oil, and garlic. Marinate chicken for 30 minutes, reserving 1/2 cup for glaze.
  2. Simmer reserved marinade in a saucepan over medium heat with a pinch of cornstarch until thick and glossy.
Grilling
  1. Grill chicken breasts on medium-high for 4-5 minutes per side until distinct char marks appear.
  2. Place pineapple rings on the grill for the last 3 minutes until caramelized and golden-brown.
  3. Top each chicken breast with a slice of mozzarella and close the lid for 60 seconds to melt.
Assembly
  1. Stack chicken, cheese, and pineapple. Drizzle heavily with the thick glaze. Top with green onions and sesame seeds.

Notes

For maximum verticality, use a toothpick to secure the stack if needed.
Ensure the glaze is thick enough to drip slowly down the sides for the best photo.
