Ingredients
  

Bowl Components
  • 1 cup (185g) Jasmine Rice Dry
  • 1.5 cups (350ml) Water For cooking rice
  • 12 Large Shrimp Peeled and deveined
  • 1 tbsp (15ml) Avocado Oil Or neutral oil
  • 1 tsp Chili Powder Part of rub
  • 1 large Avocado Sliced and fanned
  • 1 cup Mango Diced yellow cubes
  • 0.25 cup (40g) Red Onion Finely diced
  • 1 small Red Jalapeno Minced
  • 2 tbsp (30ml) Lime Juice For glaze
  • 1 tbsp (15ml) Honey For glaze

Equipment

  • 1 Cast Iron Skillet For charring the shrimp
  • 1 Small saucepan For steaming rice

Method
 

Rice Preparation
  1. Rinse jasmine rice. Combine with water and salt in a pot. Bring to boil, simmer covered for 15 minutes.
Shrimp and Salsa
  1. Combine diced mango, red onion, jalapeno, and cilantro in a small bowl.
  2. Toss shrimp in chili rub. Sear in a hot skillet for 2 minutes per side until charred and opaque.
Assembly
  1. Layer rice, top with charred shrimp, fanned avocado, and mango salsa. Drizzle with lime-chili glaze and garnish with chili flakes.

Notes

Ensure shrimp are very dry for maximum char marks.
Use a very sharp knife for the avocado to get thin, professional slices.
