  • 1.5 lbs Boneless Skinless Chicken Breasts 680g
  • 1.5 cups Barbecue Sauce 355ml, thick and glossy
  • 1 tbsp Apple Cider Vinegar 15ml
  • 1 tsp Garlic Powder 3g
  • 1 tsp Cracked Black Pepper 6g
  • 1/2 medium Red Onion 75g, thinly sliced into slivers
  • 1/4 cup Fresh Cilantro 15g, finely chopped

  • 2 Two Forks for Shredding

Method
 

Preparation and Cooking
  1. Place chicken breasts in the slow cooker and season with garlic powder and half the cracked black pepper.
  2. Pour 1 cup (235ml) of BBQ sauce and apple cider vinegar over the chicken. Cover and cook on LOW for 3-4 hours.
  3. Remove chicken, shred with forks into tender strands, then return to the pot with the remaining 1/2 cup (120ml) sauce to achieve a glossy finish.
  4. Top with thin red onion slivers, fresh cilantro, and the remaining cracked black pepper.

Notes

Use a hand mixer for faster shredding.
Soak red onions in ice water for 10 minutes to make them translucent and extra crisp.
