Preparation
- In a small saucepan, whisk together the fine unsweetened cocoa powder, sugar, and salt until no large lumps remain.
- Slowly whisk in the cold water until the mixture is a smooth, matte brown liquid.
- Place over medium heat and bring to a gentle boil. Reduce heat to low and simmer for 3-5 minutes until the syrup is glossy and thick enough to ribbon off a spoon.
- Remove from heat and stir in the vanilla extract. Pour into a clear glass jar and allow to cool. The syrup will thicken significantly as it reaches room temperature.
Notes
For a darker color, use Dutch-processed cocoa powder.
