Main Ingredients
  • 1.5 cups (285g) White Rice Steamed and warm
  • 2 tbsp (10g) Fresh Cilantro Finely chopped
  • 2 large (300g) Avocados Ripe, chunky mashed
  • 1 lb (454g) Chicken Breast Diced into small cubes
  • 3 tbsp (45ml) Honey
  • 2 tbsp (30ml) Lime Juice Freshly squeezed
  • 1 tbsp (15ml) Cooking Oil High smoke point
  • pinch Red Pepper Flakes For garnish

Equipment

  • 1 Heavy-bottomed skillet For searing chicken
  • 1 Ring Mold or 1-cup Measuring Cup For stacking layers

Method
 

Prepare the Components
  1. Fold chopped cilantro into the warm steamed rice until green specks are evenly distributed.
  2. Mash avocados roughly with salt and a splash of lime juice, leaving plenty of chunks for structure.
Cook the Chicken
  1. Sear diced chicken in a hot skillet until dark charred edges appear and chicken is cooked through.
  2. Add honey and lime juice to the pan; toss chicken until a shiny, thick glaze forms.
Assembly
  1. Using a ring mold, layer rice, then avocado, then glazed chicken. Press firmly and release mold.

Notes

Use a ring mold for the best vertical height.
Ensure the pan is very hot before adding chicken for the best char.
