  • 1 lb Farfalle (Bow Tie) Pasta 454g
  • 1 lb Italian Sausage Links 454g, sliced into thick rounds
  • 2 large Red Bell Peppers Diced into small cubes
  • 1/4 cup Extra Virgin Olive Oil 60ml
  • 5 cloves Garlic Minced
  • 2 tbsp Tomato Paste 30g
  • 1/2 cup Parmesan Cheese 50g, finely grated
  • 1/4 cup Fresh Parsley 10g, finely chopped

Equipment

  • 1 Large Skillet For searing sausage and tossing pasta.
  • 1 Large pasta pot To boil farfalle.

Method
 

Preparation
  1. Cook farfalle in salted water until just under al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet, sear sausage rounds in olive oil over medium-high heat until edges are deeply browned. Remove and set aside.
  3. Sauté red bell peppers until softened. Add garlic and tomato paste, stirring until the oil turns a bright reddish-orange.
  4. Pour in 1/2 cup of pasta water and stir to emulsify into a glossy sauce. Toss in pasta and sausage until coated.

Notes

Always reserve more pasta water than you think you need to adjust sauce consistency.
Grate your Parmesan fresh for a better melting experience.
