Preparation
- Place a popover pan on the lower oven rack and preheat your oven to 425°F (220°C).
- In a large bowl, whisk room-temperature eggs until frothy. Add warmed milk and melted butter, whisking to combine.
- Sift flour and salt over the liquid mixture. Whisk until mostly smooth (a few small lumps are fine).
- Carefully grease the hot pan. Fill cups 2/3 full. Bake for 20 minutes at 425°F without opening the oven.
- Lower heat to 350°F (175°C) and bake for 15-20 more minutes until deep golden-brown and craggy.
- Remove from oven and immediately poke a small hole in each to release steam. Serve hot with butter and jam.
Notes
Always use room temperature eggs and warm milk for the highest rise.
