  • 1 lb Ground Turkey 93/7 lean to fat ratio
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper Freshly cracked
  • 1 tbsp Avocado Oil For searing
  • 4 slices Swiss Cheese Thick slices
  • 4 Brioche Buns Split and toasted
  • 4 tbsp Mayonnaise 1 tbsp per burger
  • 4 leaves Green Leaf Lettuce Ruffled
  • 4 slices Red Tomato Thick cut
  • 12 rings Red Onion 3 thin rings per burger

Method
 

Prep the Patties
  1. Gently divide 1 lb (450g) ground turkey into 4 portions. Shape into thick rounds, creating a small thumbprint indentation in the center of each.
  2. Season both sides of the patties liberally with salt and pepper just before cooking.
Cook and Assemble
  1. Heat oil in a skillet over medium-high heat. Sear patties for 4-5 minutes per side until dark brown char marks appear.
  2. Add Swiss cheese slices in the last minute of cooking; cover with a lid to ensure the cheese is drooping and fully melted.
  3. Toast brioche buns. Spread mayo on the bottom bun, then layer ruffled lettuce, seared patty with cheese, tomato slice, and three red onion rings.

Notes

Always use an instant-read thermometer to reach 165°F (74°C).
Do not overwork the meat or the burgers will become tough.
