Prep the Patties
- Gently divide 1 lb (450g) ground turkey into 4 portions. Shape into thick rounds, creating a small thumbprint indentation in the center of each.
- Season both sides of the patties liberally with salt and pepper just before cooking.
Cook and Assemble
- Heat oil in a skillet over medium-high heat. Sear patties for 4-5 minutes per side until dark brown char marks appear.
- Add Swiss cheese slices in the last minute of cooking; cover with a lid to ensure the cheese is drooping and fully melted.
- Toast brioche buns. Spread mayo on the bottom bun, then layer ruffled lettuce, seared patty with cheese, tomato slice, and three red onion rings.
