  • 2 cups (224g) Almond Flour Super-fine
  • 3 cups (336g) Mozzarella Cheese Shredded, low-moisture
  • 4 tbsp (60g) Cream Cheese Full-fat
  • 3 tbsp (27g) Psyllium Husk Powder Blond variety
  • 2 large Eggs Room temperature
  • 1 tbsp (12g) Baking Powder
  • 1 tsp (5ml) Apple Cider Vinegar
  • 1 large Egg For glaze
  • 2 tbsp (18g) White Sesame Seeds
  • 1 tbsp (4g) Fresh Parsley Finely chopped

Equipment

  • 1 Microwave-safe glass bowl For melting cheeses
  • 1 Pastry Brush For the egg wash glaze
  • 1 Silicone baking mat To prevent sticking

Method
 

Making the Dough
  1. Combine mozzarella and cream cheese in a microwave-safe bowl. Heat in 30-second intervals until fully melted and smooth.
  2. Add almond flour, psyllium husk, baking powder, vinegar, and 2 eggs. Knead into a uniform dough while the cheese is still warm.
  3. Divide into 6 portions and roll into spheres. Place on a baking sheet and flatten slightly into bun shapes.
Finishing and Baking
  1. Brush the buns with a beaten egg wash for a high-shine finish. Sprinkle generously with sesame seeds and chopped parsley.
  2. Bake at 375°F (190°C) for 22-25 minutes until deep golden-brown. Let cool completely to set the porous interior.

Notes

Use blond psyllium husk to avoid a purple tint.
Ensure the cheese is completely melted for a smooth texture.
