  • 1/4 cup Lime Juice Freshly squeezed (60ml)
  • 2 tbsp Honey Liquid (30ml)
  • 2 tbsp Soy Sauce Low sodium preferred (30ml)
  • 1 tbsp Vegetable Oil Or any high-smoke point oil (15ml)
  • 3 cloves Garlic Minced
  • 1/4 cup Fresh Cilantro Finely chopped
  • 4 Lime Wedges For serving

  • 1 Outdoor Grill Gas or Charcoal
  • 1 Meat Mallet To even out chicken thickness

Method
 

Preparation
  1. Whisk lime juice, honey, soy sauce, oil, and garlic in a bowl. Pour over chicken in a bag and marinate for 30 minutes.
  2. Preheat grill to medium-high (400°F) and oil the grates thoroughly.
Cooking
  1. Place chicken on grill at an angle to create diagonal marks. Grill for 5-6 minutes per side.
  2. During the last 2 minutes, brush extra glaze over the chicken until it looks glistening and sticky.
  3. Remove chicken to a plate, rest for 5 minutes, then top with heavy cilantro and lime wedges.

Notes

Pound chicken to 1/2 inch thickness for even cooking.
Do not marinate longer than 4 hours or meat becomes mushy.
