  • 4 sheets Roasted Seaweed (Gim) Kimbap grade
  • 2 cups (400g) Short-grain white rice Cooked
  • 1 tbsp (15ml) Toasted sesame oil Plus extra for glazing
  • 1/2 tsp Fine sea salt
  • 2 Carrots Julienned and sautéed
  • 8 oz (225g) Fresh spinach Blanched and seasoned
  • 4 strips Yellow pickled radish (Danmuji)
  • 3 large Eggs Fried into thin strips
  • 4 Imitation crab sticks Sliced lengthwise
  • 1 tsp Toasted white sesame seeds For garnish

  • 1 Bamboo Rolling Mat Essential for tight rolls
  • 1 Sharp Chef's Knife Clean cuts

Method
 

Prepare the Components
  1. Mix cooked short-grain rice with sesame oil and salt while warm. Let cool to room temperature.
  2. Blanch spinach for 30 seconds; julienne and sauté carrots until tender. Slice pickled radish and crab sticks into long strips.
  3. Fry whisked eggs into a thin omelet, then slice into thin yellow strips.
Assembly
  1. Place seaweed on a mat. Spread a thin, even layer of rice over 2/3 of the sheet.
  2. Arrange carrots, spinach, radish, egg, and crab in neat horizontal rows across the center of the rice.
  3. Roll tightly using the bamboo mat. Lightly brush the exterior with sesame oil.
  4. Slice into 1/2-inch rounds with a damp sharp knife. Garnish with toasted sesame seeds.

Notes

Wipe your knife with a damp cloth between every few slices for the cleanest look.
Ensure all cooked vegetables are cooled before rolling to prevent the seaweed from becoming soggy.
