Ingredients
  

Main Ingredients
  • 1 lb (450g) Chicken Breast Boneless, skinless, sliced into cutlets
  • 12 oz (340g) Penne Pasta Cooked al dente
  • 1/2 cup (60g) Sun-Dried Tomatoes Oil-packed, chopped
  • 3 cloves Garlic Minced
  • 1.5 cups (350ml) Heavy Cream
  • 1/2 cup (120ml) Chicken Broth
  • 1/2 cup (50g) Parmesan Cheese Freshly grated
  • 1 tsp Dried Red Pepper Flakes Adjust to taste
  • 2 tbsp Fresh Parsley Finely chopped for garnish

Equipment

  • 1 Large Skillet Heavy-bottomed preferred for better searing.
  • 1 Large pot For boiling pasta.

Method
 

Cook the Chicken
  1. Season chicken with salt and pepper. In a large skillet over medium-high heat, sear chicken in olive oil for 4-5 minutes per side until golden brown. Remove and set aside.
Boil Pasta
  1. Cook penne in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
Prepare Sauce
  1. In the same skillet, melt butter and sauté garlic and sun-dried tomatoes for 1-2 minutes until fragrant and blistered.
  2. Add heavy cream, broth, parmesan, and red pepper flakes. Simmer until the sauce is thick and glossy.
Assemble
  1. Toss pasta in the sauce. Slice chicken and place on top. Garnish with fresh parsley and extra chili flakes.

Notes

Use the oil from the sun-dried tomato jar for searing the chicken to add extra flavor.
Always grate your own Parmesan cheese for the smoothest sauce texture.
