  • 3 cloves Garlic Minced
  • 1/2 cup Sun-Dried Tomatoes Sliced
  • 1 cup Heavy Cream 240ml
  • 1/2 cup Parmesan Cheese Freshly grated
  • 1 tsp Red Pepper Flakes Adjust for heat
  • 1/4 cup Fresh Basil Chopped

  • 1 Cast Iron Skillet 12-inch seasoned skillet preferred
  • 1 Meat Mallet For pounding chicken to even thickness

Method
 

Sear the Chicken
  1. Heat tomato oil in a cast iron skillet over medium-high heat. Season chicken with salt and pepper. Sear for 5 minutes per side until golden-brown with caramelized edges. Remove and set aside.
Make the Sauce
  1. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant, scraping up the brown bits.
  2. Pour in heavy cream, red pepper flakes, and parmesan. Stir constantly until the sauce thickens into a rich orange hue.
Combine
  1. Return chicken to the skillet. Simmer for 2-3 minutes until internal temp reaches 165°F. Garnish with fresh basil and extra parmesan.

Notes

Use a cast iron skillet for the best sear.
Always use freshly grated parmesan to avoid a grainy sauce.
