Sear the Chicken
- Heat tomato oil in a cast iron skillet over medium-high heat. Season chicken with salt and pepper. Sear for 5 minutes per side until golden-brown with caramelized edges. Remove and set aside.
Make the Sauce
- In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant, scraping up the brown bits.
- Pour in heavy cream, red pepper flakes, and parmesan. Stir constantly until the sauce thickens into a rich orange hue.
Combine
- Return chicken to the skillet. Simmer for 2-3 minutes until internal temp reaches 165°F. Garnish with fresh basil and extra parmesan.
