Preparation
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin thoroughly with oil or butter.
- Sauté the diced red peppers in a pan for 2-3 minutes until slightly softened. Ensure bacon is pre-cooked until crispy and crumbled into bits.
Mixing and Assembly
- In a large bowl, whisk the 10 eggs with milk, salt, and pepper for 2 minutes until bubbly and aerated.
- Fold in the chopped spinach and shredded cheddar cheese into the egg mixture.
- Distribute the sautéed peppers and crispy bacon bits into the bottom of the muffin cups. Pour the egg mixture over the top, filling each cup 3/4 full.

- Bake for 20-25 minutes until the edges are golden-brown and puffed, and the centers are set.
