  • 1.5 lbs Chicken Breast sliced into strips
  • 2 tsp Dried Oregano
  • 1 cup White Rice long grain
  • 1 cup Cherry Tomatoes halved
  • 1 medium Cucumber sliced
  • 0.5 cup Kalamata Olives pitted
  • 0.5 cup Feta Cheese crumbled
  • 0.5 cup Tzatziki Sauce

Method
 

Preparation
  1. Rinse rice and cook with 2 cups of salted water for 15-18 minutes until fluffy.
  2. Season chicken strips with oregano and salt. Sear in a hot skillet with olive oil until edges are charred and golden-brown.
  3. Halve tomatoes, slice cucumbers, and sliver red onions.
  4. Divide rice into 4 bowls. Top with sections of chicken, tomatoes, cucumber, olives, and onion. Add a dollop of tzatziki and feta.

Notes

Let all cooked components cool completely before sealing containers to prevent sogginess.
Store tzatziki in separate small containers for better shelf life.
