Ingredients
  

Chicken & Marinade
  • 1.5 lbs Chicken Breast 680g, cut into chunks
  • 2 tbsp Olive Oil 30ml
  • 1 tbsp Dried Oregano
  • 2 cloves Garlic minced
Assembly & Toppings
  • 8 small Flour Tortillas toasted
  • 1 cup Tzatziki Sauce 240ml, thick and creamy
  • 1 cup Red Tomatoes 150g, diced
  • 1/2 cup Red Onion thinly sliced
  • 1/2 cup Feta Cheese 75g, crumbled
  • 1/4 cup Fresh Parsley chopped

Equipment

  • 1 Cast Iron Skillet To achieve a deep sear on the chicken.
  • 1 Mixing Bowl For the marinade.

Method
 

Prep and Marinade
  1. Whisk olive oil, lemon juice, garlic, and oregano in a bowl. Add chicken chunks and toss to coat. Let marinate for 20 minutes.
Cooking
  1. Heat skillet over medium-high heat. Sear chicken chunks until golden-brown and cooked through (165°F).
  2. Warm flour tortillas in a dry pan until light golden-brown toasted spots appear.
Assembly
  1. Spread tzatziki on a tortilla, add chicken, tomatoes, onions, feta, and parsley.

Notes

Ensure the skillet is very hot before adding chicken for the best sear.
Double the tzatziki to use as a dip for veggies later!
