Mediterranean Quinoa Salad Ingredients
  • 1 cup (185g) White and Red Quinoa Mix Rinsed
  • 2 cups (475ml) Water Or vegetable broth
  • 1 large (300g) English Cucumber Unpeeled, cut into half-moons
  • 1 cup (150g) Red Cherry Tomatoes Halved
  • 1 cup (150g) Yellow Cherry Tomatoes Halved
  • 1/4 cup (40g) Red Onion Finely diced
  • 1/2 cup (75g) Kalamata Olives Pitted, whole
  • 1/2 cup (75g) Feta Cheese Large crumbles
  • 1/4 cup (60ml) Extra Virgin Olive Oil
  • 2 tbsp (30ml) Red Wine Vinegar
  • 1 tsp (5g) Dried Oregano Plus more for garnish

Equipment

  • 1 Small Pot For cooking quinoa
  • 1 Large White Ceramic Bowl For mixing and serving

Method
 

Prepare the Salad
  1. Rinse quinoa. Combine with water in a pot, bring to a boil, then simmer covered for 15 minutes. Let sit for 5 minutes then fluff.
  2. Slice cucumber into half-moons, halve the tomatoes, and dice the onion. Place in a large bowl with whole olives.
  3. Combine olive oil, vinegar, and oregano in a jar and shake until glossy and translucent.
  4. Toss cooled quinoa with vegetables and dressing. Top with feta, fresh parsley, and extra oregano.

Notes

Always rinse your quinoa to remove bitterness.
Cool the quinoa completely before adding feta to maintain the salad's texture.
