  • 1.5 lbs Chicken Breasts Boneless and skinless (680g)
  • 6 slices Bacon Thick-cut, chopped (170g)
  • 1.5 cups Heavy Cream (360ml)
  • 1 packet Ranch Seasoning Dry mix (28g)
  • 1.5 cups Sharp Cheddar Cheese Shredded (170g)
  • 4 stalks Green Onions Sliced (40g)
  • 2 tbsp Unsalted Butter (30g)
  • 1 tbsp Avocado Oil (15ml)

Equipment

  • 1 12-inch Skillet Cast iron or stainless steel preferred.
  • 1 Meat Thermometer To ensure internal temperature reaches 165°F.

Method
 

Preparation
  1. Place bacon in a cold skillet over medium heat. Fry until crispy and fat is rendered. Remove bacon and set aside, keeping the fat in the pan.
  2. Increase heat to medium-high. Season chicken with salt and pepper. Sear for 5-6 minutes per side until a deep golden-brown crust forms. Remove chicken from pan.
  3. Add butter to the pan, then whisk in heavy cream and ranch seasoning. Simmer until the sauce thickens and coats a spoon.
  4. Return chicken to the pan. Top with shredded cheddar. Cover with a lid for 2 minutes until cheese is melted. Garnish with bacon and green onions.

Notes

Use a block of cheddar for better melting.
Don't wash the pan after cooking bacon; that fat adds vital flavor to the chicken sear.
