Graham Cracker Base
  • 2 cups graham cracker crumbs 240g
  • 1/2 cup unsalted butter 115g, melted
  • 1 pinch salt
Peanut Butter Mousse
  • 16 oz cream cheese 450g, softened
  • 1.5 cups creamy peanut butter 375g
  • 2 cups powdered sugar 240g
  • 1 cup heavy whipping cream 240ml, chilled
Glossy Ganache & Garnish
  • 1.5 cups dark chocolate chips 255g
  • 1 cup heavy whipping cream 240ml

Method
 

Prepare the Crust
  1. Combine graham cracker crumbs and melted butter. Press into a 1-inch thick layer in a trifle bowl.
Create the Mousse
  1. Beat cream cheese, peanut butter, and sugar. Fold in whipped heavy cream to create an aerated, pale-tan mousse.
Finish with Ganache
  1. Pour hot cream over chocolate chips. Stir until glossy and pour a 1/2-inch layer over the mousse. Garnish with peanut butter cups.

Notes

Chill for at least 2 hours before serving to let the ganache set.
Use a vegetable peeler for the dark chocolate curls to get that professional look.
