  • 2 tbsp Extra Virgin Olive Oil 30ml
  • 1 tsp Smoked Paprika 5ml
  • 1 tsp Garlic Powder 5ml
  • 0.5 tsp Dried Oregano 2.5ml
  • 1 tsp Kosher Salt 5ml
  • 0.5 tsp Cracked Black Pepper 2.5ml
  • 1 tbsp Fresh Parsley Chopped for garnish

  • 1 Rimmed Baking Sheet Lined with parchment paper
  • 1 Meat Mallet For pounding to even thickness
  • 1 Instant-Read Thermometer To ensure 165°F internal temp

Method
 

Preparation
  1. Preheat oven to 425°F (220°C). Pound chicken breasts to 1-inch (2.5cm) thickness and pat dry.
  2. Mix spices in a bowl. Coat chicken in olive oil, then rub the spice mixture evenly over both sides.
Cooking
  1. Place chicken on a baking sheet and roast for 18-22 minutes until internal temp reaches 160°F (71°C).
  2. Let rest for 5-10 minutes under foil. Slice and garnish with fresh parsley and oregano flakes.

Notes

Resting is mandatory to keep juices inside the meat.
Use a thermometer to avoid overcooking.
