  • 4 6 oz Salmon Fillets Center-cut, skin-on or off
  • 1/2 cup (60g) Panko Breadcrumbs Unseasoned
  • 1/2 cup (50g) Parmesan Cheese Finely grated
  • 1 tsp Dried Parsley Flakes
  • 1/2 tsp Cracked Black Pepper Freshly cracked
  • 2 tbsp (30ml) Olive Oil Or melted butter
  • 4 wedges Fresh Lemon For garnish
  • 4 sprigs Fresh Dill

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment. Pat salmon dry with paper towels.
  2. In a bowl, combine panko, parmesan, parsley, pepper, and olive oil until it resembles wet sand.
Cooking
  1. Press the parmesan mixture firmly onto the top of the salmon fillets to create a thick, dense layer.
  2. Bake for 12-15 minutes. For a deeper golden color, broil for the final 1-2 minutes.
  3. Serve immediately with a fresh lemon wedge and a sprig of fresh dill.

Notes

Use freshly grated parmesan for the best melting properties.
Ensure salmon is at room temperature before baking for even results.
