Caramelize the Peaches
- Heat a grill pan over medium-high heat. Place peach wedges on the pan and cook for 2-3 minutes per side until dark brown grill marks appear and fruit is caramelized.
Assemble the Sandwich
- Butter one side of each bread slice. Place one slice butter-side down in a skillet. Layer with Brie wedges, caramelized peaches, fresh thyme, and a honey drizzle.
- Place the second bread slice on top, butter-side up. Cook over medium-low heat for 3-4 minutes per side until the bread is golden-brown toasted and the Brie is melted.
Notes
Use a firm but ripe peach to ensure it holds its shape during grilling.
