  • 2 slices Sourdough bread thick-cut
  • 4 oz Brie cheese with rind, sliced into wedges (113g)
  • 1 medium Peach sliced into 1/2-inch wedges
  • 1 tbsp Honey golden liquid (15ml)
  • 1 tsp Fresh thyme leaves stems removed
  • 1.5 tbsp Salted butter softened (22ml)

  • 1 Serrated Knife

Method
 

Caramelize the Peaches
  1. Heat a grill pan over medium-high heat. Place peach wedges on the pan and cook for 2-3 minutes per side until dark brown grill marks appear and fruit is caramelized.
Assemble the Sandwich
  1. Butter one side of each bread slice. Place one slice butter-side down in a skillet. Layer with Brie wedges, caramelized peaches, fresh thyme, and a honey drizzle.
  2. Place the second bread slice on top, butter-side up. Cook over medium-low heat for 3-4 minutes per side until the bread is golden-brown toasted and the Brie is melted.

Notes

Use a firm but ripe peach to ensure it holds its shape during grilling.
Keep the rind on the Brie for extra depth of flavor and better structural integrity while melting.
