  • 6 cups (900g) Watermelon Raw, cubed irregularly
  • 3 large (450g) Fresh Peaches Sliced into crescents, skin left on
  • 1/2 cup (15g) Fresh Mint Whole leaves
  • 3 tbsp (45ml) Lime Juice Freshly squeezed
  • 1 tbsp (15ml) Agave or Honey For the glossy sheen
  • 1 tsp (5g) Sea Salt Flakes Maldon or similar flaky style

  • 1 Large rustic ceramic bowl White color preferred for visual contrast
  • 1 Sharp Chef's Knife

Method
 

Prepare Fruit
  1. Cut the chilled watermelon into large, rustic, irregular cubes and place them in the bottom of a large ceramic bowl.
  2. Slice fresh peaches into thick crescents, keeping the skin on for texture and color. Layer these over the watermelon cubes.
Dress and Garnish
  1. Whisk lime juice and agave together. Drizzle over the fruit until a faint glossy sheen is visible.
  2. Scatter whole mint leaves throughout the bowl and finish with a generous sprinkle of flaky sea salt just before serving.

Notes

Serve immediately to maintain the crunch of the sea salt.
Ensure the watermelon is ice-cold before cubing for the best sensory experience.
