  • 1/2 cup Pepperoncini Peppers Sliced rings, yellowish-green (60g)
  • 2 tbsp Pepperoncini Brine From the jar (30ml)
  • 1 cup Heavy Cream For the ivory sauce (240ml)
  • 1/2 cup Chicken Broth (120ml)
  • 4 cloves Garlic Minced
  • 1 large Shallot Finely diced
  • 1/4 cup Parmesan Cheese Grated (25g)
  • 1 tsp Red Chili Flakes Dried
  • 2 tbsp Fresh Parsley Flat-leaf, chopped

  • 1 Cast Iron Skillet A dark skillet provides the best sear and visual contrast.
  • 1 Meat Mallet For pounding chicken to even thickness.

Method
 

Prepare the Chicken
  1. Pat the chicken breasts dry and pound to even thickness. Season with salt and pepper, then dredge lightly in flour.
  2. Heat oil and butter in a dark cast iron skillet. Sear chicken for 5-6 minutes per side until golden-brown. Remove and set aside.
Make the Sauce
  1. Sauté garlic and shallots in the skillet. Deglaze with pepperoncini brine, scraping up the fond.
  2. Add chicken broth and heavy cream. Simmer until the sauce becomes a thick, pale ivory color. Stir in Parmesan.
Final Assembly
  1. Return chicken to the skillet. Top with pepperoncini rings, chili flakes, parsley, and a drizzle of olive oil for shimmering golden droplets.
