  • 1 cup Cottage Cheese 4% milk fat, small curd (225g)
  • 16 slices Pepperoni Standard size (approx. 60g)
  • 1 teaspoon Dried Oregano 4g
  • 1/2 teaspoon Black Pepper Freshly cracked (2g)

  • 1 Baking Sheet Large size
  • 1 Parchment Paper To prevent sticking

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Spoon 1 tablespoon (15ml) mounds of cottage cheese onto the parchment, spacing them 2 inches apart. Flatten slightly into circles.
Assembly & Baking
  1. Place one pepperoni slice in the center of each cheese mound. Sprinkle dried oregano and cracked black pepper over the top.
  2. Bake for 18-22 minutes until the edges are deep golden-brown and the pepperoni is cupped and charred.
  3. Remove from oven and let sit for 5 minutes to harden into brittle, lacy crisps.

Notes

Use full-fat cottage cheese for the best lacy texture.
Ensure the crisps are deep golden-brown before removing from the oven or they won't be crunchy.
