  • 1 cup Granulated Sugar 200g
  • 1 tsp Baking Powder 5ml
  • 1 tsp Baking Soda 5ml
  • 1/2 tsp Kosher Salt 2.5ml
  • 20 oz Crushed Pineapple 567g, undrained
  • 2 large Eggs Room temperature
  • 1/2 cup Unsalted Butter 113g, melted
  • 1 tbsp Pure Vanilla Extract 15ml

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan thoroughly with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
Baking
  1. In a separate bowl, beat the eggs then stir in the melted butter, undrained crushed pineapple, and vanilla extract.
  2. Gently fold the wet ingredients into the dry ingredients using a spatula until just combined. Do not overmix.
  3. Pour batter into the pan and bake for 55-65 minutes until the top is golden-brown and a toothpick comes out clean.

Notes

Do not drain the pineapple juice; it provides the necessary moisture for the crumb.
Allow the bread to cool completely before slicing for the best texture.
