Kabob Ingredients
  • 1.5 lbs Chicken Breast 680g, cut into 1-inch cubes
  • 3 cups Fresh Pineapple 450g, cut into thick chunks
  • 2 large Red Bell Peppers Cut into 1-inch pieces
  • 1 large Red Onion Cut into petals
  • 1/2 cup Soy Sauce 120ml, low sodium preferred
  • 1/4 cup Honey 60ml
  • 1 tbsp Garlic Minced
  • 1 tsp Ginger Freshly grated
  • 1 tsp Dried Herb Flakes Parsley or Oregano
  • 1/2 tsp Cracked Black Pepper Coarse grind

Equipment

  • 12 Wooden Skewers Soaked in water for 30 minutes
  • 1 Outdoor Grill or Grill Pan
  • 1 Basting Brush

Method
 

Preparation
  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. In a small saucepan, combine soy sauce, honey, garlic, and ginger. Simmer over medium heat for 5-7 minutes until slightly thickened and translucent.
Assembly & Grilling
  1. Thread chicken, pineapple, red pepper, and red onion onto the skewers in an alternating pattern.
  2. Preheat grill to medium-high. Grill skewers for 12-15 minutes, turning every few minutes. Brush generously with glaze during the last 5 minutes of cooking until chicken is 165°F (74°C).
  3. Remove from heat. Sprinkle with dried herb flakes and cracked black pepper while the glaze is still wet and glistening.

Notes

Always use fresh pineapple for the best caramelization.
Ensure chicken cubes are uniform in size for even cooking.
