Preparation
- Soak wooden skewers in water for at least 30 minutes to prevent burning.
- In a small saucepan, combine soy sauce, honey, garlic, and ginger. Simmer over medium heat for 5-7 minutes until slightly thickened and translucent.
Assembly & Grilling
- Thread chicken, pineapple, red pepper, and red onion onto the skewers in an alternating pattern.
- Preheat grill to medium-high. Grill skewers for 12-15 minutes, turning every few minutes. Brush generously with glaze during the last 5 minutes of cooking until chicken is 165°F (74°C).
- Remove from heat. Sprinkle with dried herb flakes and cracked black pepper while the glaze is still wet and glistening.
