Pineapple Cucumber Salad Ingredients
  • 2 large English Cucumbers approx. 600g, sliced into rounds with skin on
  • 3 cups Fresh Pineapple approx. 450g, cut into bite-sized chunks
  • 1 small Red Onion approx. 100g, paper-thinly sliced
  • 1 large Jalapeno finely diced, seeds removed for less heat
  • 1/2 cup Fresh Cilantro loosely packed sprigs
  • 1/4 cup Lime Juice approx. 60ml, freshly squeezed
  • 1 tbsp Extra Virgin Olive Oil 15ml
  • 1/2 tsp Sea Salt to taste

Equipment

  • 1 Large Mixing Bowl Preferably white for visual contrast.
  • 1 Chef's Knife Sharp knife for thin onion slices.

Method
 

Preparation
  1. Slice the cucumbers into 1/4-inch rounds and the pineapple into 1-inch chunks. Thinly sliver the red onion and dice the jalapeno.
  2. Place cucumber, pineapple, onion, jalapeno, and cilantro sprigs into a large white bowl.
  3. Whisk lime juice, olive oil, and salt together. Pour over the salad and toss gently until the ingredients are coated in a glistening glaze. Serve immediately.

Notes

Use cold produce for the most refreshing taste.
Keep cucumber skins on for maximum crunch and nutritional value.
