Prep the Apples
- Dip apples in boiling vinegar water for 10 seconds to remove wax. Dry thoroughly and insert wooden sticks into the centers.
Make the Candy Coating
- Combine sugar, water, and corn syrup in a saucepan. Heat over medium-high until it reaches 300°F (149°C) on a candy thermometer.
- Remove from heat. Stir in pineapple flavoring, lemon extract, and yellow gel coloring. Let bubbles settle.
Dip and Decorate
- Tilt pan and dip each apple, swirling to coat. Allow excess to drip off, creating a small pool at the base when placed on parchment.
- While wet, press a dehydrated lemon slice onto the side and sprinkle with yellow sugar crystals. Let harden for 1 hour.

Always use room temperature apples to prevent bubbles in the glaze.
