  • 6 large All-butter Croissants Freshly baked
  • 7 oz Dark Chocolate (70% cocoa) 200g, finely chopped
  • 1/2 cup Heavy Cream 120ml
  • 2 tbsp Unsalted Butter 30g, room temperature
  • 3/4 cup Roasted Pistachios 100g, shelled and chopped
  • 1 pinch Sea Salt Flakes Maldon or similar

Equipment

  • 1 Baking Sheet For roasting nuts and warming croissants
  • 1 Serrated Knife For slicing pastry without crushing layers
  • 1 Heat-proof Bowl For making ganache

Method
 

Preparation
  1. Roast pistachios at 325°F (165°C) for 5-8 minutes until fragrant. Chop into a mix of dust and chunks.
  2. Heat cream to a simmer and pour over chopped chocolate. Let sit for 5 minutes, then whisk until smooth. Stir in butter and salt.
Assembly
  1. Slice croissants horizontally and spread 1.5 tablespoons (22ml) of ganache inside each.
  2. Swirl remaining ganache over the top of the closed croissants and immediately coat with chopped pistachios and sea salt.
  3. Bake at 350°F (175°C) for 3-4 minutes to crisp the pastry and melt the filling.

Notes

Use high-quality dark chocolate bars instead of chips for the glossiest finish.
Ensure pistachios are roasted fresh for the most vibrant green color.
