  • 1.5 lbs Russet Potatoes 680g, peeled and cubed
  • 1/2 cup Cornstarch 64g
  • 8 oz Mozzarella Cheese 225g, cut into sticks
  • 1.5 cups Panko Breadcrumbs 90g
  • 1 tsp Dried Herb Flakes 2g, oregano or parsley
  • 2 tbsp Fresh Parsley 8g, finely chopped
  • 1 cup Marinara Sauce 240ml, for dipping

Method
 

Preparation
  1. Boil potatoes until tender, drain well, and mash until smooth. Mix in cornstarch and seasoning to form a dough.
  2. Wrap small portions of potato dough around mozzarella sticks, sealing tightly into cylindrical shapes.
  3. Dip each stick in egg wash and then roll in panko breadcrumbs mixed with dried herbs.
  4. Deep fry in 350°F (175°C) oil for 3-4 minutes until golden brown and crispy.

Notes

Ensure the oil is at the correct temperature to prevent sogginess.
Make sure the cheese is fully sealed within the potato dough to prevent leaks.
