Ingredients
  

Chocolate Cookie Crust
  • 24 cookies Chocolate Sandwich Cookies approx 300g
  • 6 tbsp Unsalted Butter 85g, melted
  • 1 tbsp Granulated Sugar 12g
Peanut Butter Filling
  • 32 oz Cream Cheese 900g, softened
  • 1 cup Creamy Peanut Butter 250g
  • 1 cup Granulated Sugar 200g
  • 1/2 cup Sour Cream 120g
  • 4 large Eggs Room temperature
Toppings
  • 1/2 cup Dark Chocolate Chips 90g
  • 1/2 cup Heavy Cream 120ml
  • 10 pieces Reese's Peanut Butter Cups chopped

Equipment

  • 1 9-inch springform pan
  • 1 Food Processor For the crust
  • 1 Electric mixer Hand or stand mixer

Method
 

Preparation
  1. Combine cookie crumbs, butter, and sugar. Press into a 9-inch pan, reaching halfway up the sides. Bake at 325°F for 10 minutes.
  2. Beat cream cheese and sugar. Add peanut butter and sour cream. Gently mix in eggs one at a time until just combined.
  3. Pour filling into crust. Bake in a water bath for 60-70 minutes until edges are set but center jiggles.
  4. Melt chocolate and cream for ganache. Pour over chilled cake. Top with chopped Reese's and drizzle with extra peanut butter and chocolate.

Notes

Ensure ingredients are at room temperature to avoid lumps.
Chill for at least 6 hours before slicing for the best texture.
