  • 1 whole Head of Garlic Roasted until caramelized
  • 1 cup (227g) Unsalted Butter High quality grass-fed preferred
  • 1 tbsp (15g) Grainy Mustard For texture
  • 2 tbsp (8g) Fresh Parsley Finely chopped
  • 1 tsp (2g) Red Pepper Flakes For vibrant red flecks
  • 1 whole Lemon Zested
  • 1 tsp (6g) Coarse Sea Salt To taste

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with oil, wrap in foil, and roast for 40-50 minutes until soft and golden.
  2. Melt butter in a saucepan over low heat. Squeeze the roasted garlic cloves into the butter, mashing slightly to create a textured, glossy consistency.
  3. Whisk in grainy mustard, red pepper flakes, lemon zest, parsley, and sea salt. Stir until combined and serve warm over seared steak.

Notes

Use a single whole clove of roasted garlic as a garnish in the ramekin for visual appeal.
Ensure the parsley is added off the heat to keep it bright green.
