  • 2 lbs Sweet Potatoes About 900g, sliced into 1/2-inch rounds
  • 3 tbsp Extra Virgin Olive Oil 45ml
  • 1/2 tsp Sea Salt Adjust to taste
  • 1/2 cup Feta Cheese 75g, crumbled
  • 2 tbsp Amber Honey 30ml, for drizzling
  • 1 tbsp Fresh Thyme Leaves 4g
  • 1/2 tsp Cracked Black Pepper 2g

  • 1 Rimmed Baking Sheet Heavy-duty to prevent warping.
  • 1 Chef's Knife Sharp knife for even 1/2-inch slices.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes and slice them into uniform 1/2-inch (1.25 cm) thick rounds.
  2. In a large bowl, toss the potato rounds with olive oil and sea salt until thoroughly coated.
  3. Arrange rounds in a single layer on a parchment-lined baking sheet. Roast for 20 minutes until the bottoms are deeply browned.
  4. Flip each round and roast for another 10-15 minutes. Look for the visual cue of slightly charred brown edges and a tender center.
  5. Plate the warm rounds. Scatter crumbled feta, drizzle with honey, and garnish with fresh thyme and cracked black pepper.

Use fresh thyme rather than dried for the best aromatic experience.
