- Preheat your oven to 400°F (200°C). Wash the sweet potatoes and slice them into uniform 1/2-inch (1.25 cm) thick rounds.
- In a large bowl, toss the potato rounds with olive oil and sea salt until thoroughly coated.
- Arrange rounds in a single layer on a parchment-lined baking sheet. Roast for 20 minutes until the bottoms are deeply browned.
- Flip each round and roast for another 10-15 minutes. Look for the visual cue of slightly charred brown edges and a tender center.
- Plate the warm rounds. Scatter crumbled feta, drizzle with honey, and garnish with fresh thyme and cracked black pepper.
