Ingredients

  • 1.5 lbs Lean Ground Beef (85/15 or 90/10) 500g
  • 1/2 cup Panko Breadcrumbs 30g
  • 1 Large Egg
  • 2 tbsp Worcestershire Sauce 30ml, divided
  • 1 tbsp Ketchup 15ml
  • 1 tsp Dijon Mustard 5g
  • 1 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper freshly cracked
  • 1 tbsp Olive Oil 15ml
  • 2 tbsp Unsalted Butter 28g
  • 1 Yellow Onion thinly sliced
  • 8 oz Cremini Mushrooms 225g, sliced
  • 2 tbsp All-Purpose Flour 16g
  • 2 cups Beef Broth 480ml
  • 2 tbsp Fresh Parsley finely chopped, for garnish

Equipment

  • 1 Large Skillet (12-inch)
  • 1 Large Mixing Bowl

Method

  1. In a large bowl, gently combine ground beef, Panko breadcrumbs, egg, 1 tbsp Worcestershire sauce, ketchup, Dijon, onion powder, garlic powder, salt, and pepper. Do not overmix. Form into four thick oval patties.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the patties for 3-4 minutes per side, until a deep golden-brown crust forms. Remove patties and set aside.
  3. Reduce heat to medium. Add butter to the skillet. Add sliced onions and cook until softened, about 5 minutes. Add mushrooms and a pinch of salt, cooking until browned, about 5-7 minutes more.
  4. Sprinkle flour over the vegetables and stir for 1 minute until toasted. Slowly whisk in the beef broth and the remaining 1 tbsp of Worcestershire sauce until smooth. Bring to a simmer and cook for 2-3 minutes to thicken. Season with salt and pepper to taste.
  5. Return the seared patties and any juices to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes until cooked through. Serve over mashed potatoes, garnished with fresh parsley.

Notes

Don't Overmix the Meat: Mix just until combined to ensure tender patties.
Get a Good Sear: This develops a flavorful crust that enriches the gravy.
Scrape the Brown Bits: These bits (fond) from the bottom of the pan are concentrated flavor for your gravy.
Taste and Adjust Seasoning: Always taste the final gravy and adjust salt and pepper as needed before serving.
