Ingredients
  

Salmon Meatballs
  • 1.5 lbs Skinless Salmon Cooked and flaked (680g)
  • 0.5 cup Panko Breadcrumbs 60g
  • 1 Large Egg Beaten
  • 2 tbsp Fresh Cilantro Finely chopped
  • 1 tbsp Dijon Mustard 15ml
  • 1 tsp Garlic Powder
Avocado Sauce
  • 1 Ripe Avocado Pitted and peeled
  • 0.5 cup Greek Yogurt 120g
  • 1 tbsp Lime Juice 15ml

Equipment

  • 1 Baking Sheet Lined with parchment paper
  • 1 High-speed blender For the avocado sauce

Method
 

Prepare the Meatballs
  1. In a large bowl, gently mix flaked salmon, panko, egg, cilantro, mustard, and garlic powder until just combined.
  2. Form the mixture into 1.5-inch meatballs and place on a lined baking sheet.
  3. Bake at 400°F (200°C) for 12-15 minutes until the exterior has a rough, golden-brown crust.
Prepare the Sauce
  1. Blend avocado, yogurt, and lime juice until thick and creamy. Serve in a ramekin alongside the meatballs.

Notes

Ensure the salmon is cold before mixing with the egg to prevent crumbling.
Use an oil spray on the meatballs before baking to maximize the golden-brown texture.
