  • 15 oz Black Beans rinsed and drained
  • 1 cup Sweet Yellow Corn canned or frozen
  • 1 large Red Bell Pepper diced
  • 1 cup Cheddar Cheese shredded
  • 1 cup Monterey Jack Cheese shredded
  • 2 tbsp Southwest Seasoning Chili powder, cumin, garlic powder

  • 4 Heavy-Duty Aluminum Foil 12-inch sheets
  • 1 Large Skillet For searing chicken

Method
 

Instructions
  1. Season chicken strips and sear in a hot skillet for 2 minutes per side until grill marks appear.
  2. Divide beans, corn, and peppers onto foil sheets. Top with seared chicken and a heavy layer of cheese.
  3. Seal foil and bake at 400°F (200°C) for 15-20 minutes until cheese is bubbling and browned.

Notes

Use heavy-duty foil to prevent tearing.
Broil for the last 2 minutes for a browned cheese crust.
