Ingredients
  

Pepper Steak Components
  • 1.5 lbs Flank Steak or Top Sirloin thinly sliced against the grain (680g)
  • 1 large Green Bell Pepper sliced into strips
  • 1 large Red Bell Pepper sliced into strips
  • 1/2 cup Soy Sauce low-sodium preferred (120ml)
  • 1 cup Beef Broth (240ml)
  • 1/4 cup Brown Sugar packed (50g)
  • 3 cloves Garlic minced
  • 1 tbsp Fresh Ginger grated (6g)
  • 2 tbsp Cornstarch mixed with 2 tbsp water
  • 1 tsp Toasted Sesame Seeds for garnish
  • 2 stems Green Onions sliced

Equipment

  • 1 Slow Cooker 6-quart or larger recommended
  • 1 Skillet For searing the beef

Method
 

Cooking Process
  1. Optional: Sear sliced beef in a skillet with oil for 2 minutes to develop deep flavor before adding to the slow cooker.
  2. Add beef, broth, soy sauce, brown sugar, garlic, and ginger to the slow cooker. Cook on Low for 5-6 hours.
  3. Add red and green bell pepper slices during the last 45 minutes of cooking to ensure they are softened but colorful.
  4. Stir in cornstarch slurry and cook on High for 15 minutes until gravy is thick and glossy. Garnish with sesame seeds and green onions.

Notes

Freeze-ahead tip: You can slice the beef and store it in the marinade in a freezer bag for an even faster start.
Always slice beef against the grain for maximum tenderness.
