Ingredients
  

Main Ingredients
  • 1 lb Ground Beef 80/20 lean-to-fat ratio (450g)
  • 8 small Flour Tortillas 6-inch (15cm) street taco size
  • 8 slices Yellow American Cheese For the perfect melt
  • 1/2 tsp Kosher Salt To taste
  • 1/4 tsp Cracked Black Pepper Freshly ground
Toppings
  • 2 cups Iceberg Lettuce Finely shredded (150g)
  • 1/2 small White Onion Finely diced into small cubes
  • 16 slices Dill Pickles Thinly sliced rounds
  • 1/2 cup Burger Sauce Creamy orange-pink sauce with black pepper

Equipment

  • 1 Cast Iron Skillet or Griddle Essential for high-heat searing.
  • 1 Heavy Burger Press or Spatula To smash the beef thin.

Method
 

Preparation
  1. Finely shred the iceberg lettuce and dice the white onion into small cubes. Prepare the burger sauce.
  2. Divide the ground beef into 8 balls, approximately 2 oz (60g) each. Season with salt.
Cooking
  1. Place a beef ball on a hot skillet. Top with a tortilla and press down firmly with a spatula until the beef is thin and covers the tortilla.
  2. Cook for 2 minutes until beef edges are crispy. Flip so the tortilla is on the bottom.
  3. Add a slice of American cheese and cover for 30 seconds to melt and toast the tortilla.
Assembly
  1. Remove from heat. Add lettuce, onion, pickles, and a drizzle of creamy burger sauce with black pepper.

Notes

Use 80/20 beef for the best flavor and grease glisten.
Press firmly to get those lacy, crispy edges.
