Ingredients

Main Ingredients
  • 1 lb ground chicken 93% lean preferred
  • 2 cups fresh baby spinach wilted and squeezed dry
  • 4 oz white cheddar cheese small cubes
  • 4 brioche buns split and toasted
  • 1/2 cup garlic aioli creamy style
  • 4 leaves green leaf lettuce crisp
  • 1/2 red onion thinly sliced into rings

Equipment

  • 1 Cast Iron Skillet Essential for charred edges.
  • 1 Large Mixing Bowl

Method

Prepare the Mix-ins
  1. Wilt spinach in a pan, squeeze out all liquid using a towel, and finely chop.
  2. Cut the white cheddar into small 1/4 inch cubes to ensure melted pockets.
Cook the Burgers
  1. Mix chicken, spinach, and cheese. Form into 4 patties with a thumbprint in the middle.
  2. Heat oil in skillet and cook patties for 5-6 minutes per side until charred edges appear and internal temp is 165F.

Notes

Always squeeze the spinach dry to prevent soggy burgers.
Use cubed cheese instead of shredded for better 'pockets' of melted goodness.
