Ingredients
  

Main Ingredients
  • 1 lb Flank Steak 450g, sliced into strips after cooking
  • 1 large Avocado perfectly ripe, sliced
  • 1 cup Sweet Corn 150g, fresh or frozen
  • 4 cups Spinach and Arugula Mix 120g, fresh base
  • 1/2 cup Greek Yogurt 120ml, or sour cream
  • 1 cup Fresh Cilantro 30g, packed
  • 2 whole Limes juiced
  • 1 clove Garlic minced

Equipment

  • 1 Cast Iron Skillet Essential for the perfect steak sear.
  • 1 High-speed blender For the creamy sauce.

Method
 

Prepare the Steak
  1. Pat steak dry and season with salt and pepper. Sear in a hot cast-iron skillet for 3-4 minutes per side for medium-rare.
  2. Transfer steak to a cutting board and let rest for 10 minutes before slicing against the grain into strips.
Prepare the Corn and Sauce
  1. In the same skillet, cook corn kernels over high heat until they develop dark charred spots, about 3-5 minutes.
  2. Combine yogurt, cilantro, lime juice, and garlic in a blender. Process until smooth and pale green.
Assembly
  1. Place greens in a bowl. Arrange steak strips, avocado slices, and charred corn on top. Drizzle with sauce and garnish with chili flakes.

Notes

Resting the steak is mandatory to keep the bowl from getting soggy.
Char the corn until you see dark brown spots for maximum flavor.
