Heating the Base
- Combine egg whites and granulated sugar in a clean mixer bowl over a pot of simmering water. Whisk constantly until the mixture reaches 160°F (71°C) and sugar is fully dissolved.
Whipping the Meringue
- Transfer the bowl to a stand mixer with a whisk attachment. Whip on medium-high speed until the meringue is thick, glossy, and has reached stiff peaks (about 8-10 minutes). The bowl should be cool to the touch.
Incorporating Butter
- Switch to the paddle attachment. On medium-low speed, add softened unsalted butter one tablespoon at a time, allowing each to incorporate before adding the next.
- Continue mixing until the frosting comes together into a creamy, velvet-like texture. Add vanilla and salt, then mix on low speed for 2 minutes to remove air bubbles.
Notes
Ensure all equipment is grease-free using white vinegar.
