Ingredients
  

Sandwich Components
  • 2 slices Sourdough Bread Thick-cut preferred
  • 1 tbsp Unsalted Butter Softened (14g)
  • 2 tbsp Basil Pesto Vibrant and textured (30g)
  • 1/2 cup Mozzarella Cheese Shredded or sliced (56g)
  • 3-4 slices Vine-Ripened Tomato Thinly sliced (50g)
  • 1/4 tsp Dried Oregano
  • pinch Cracked Black Pepper To taste

Equipment

  • 1 Non-stick Skillet Or a cast iron pan for extra crust.
  • 1 Spatula

Method
 

Assembly
  1. Spread softened butter on one side of each sourdough slice. These will be the outsides of the sandwich.
  2. Flip slices over and spread basil pesto on the non-buttered sides. Add half the mozzarella to one slice.
  3. Place tomato slices over the cheese. Sprinkle with dried oregano and cracked black pepper.
  4. Add the remaining mozzarella over the tomatoes and close the sandwich with the second sourdough slice, buttered side out.
Cooking
  1. Place in a skillet over medium-low heat. Cover with a lid for 2-3 minutes until cheese starts to melt.
  2. Flip the sandwich and grill uncovered for 2-3 more minutes until the crust is golden-brown and charred.

Notes

Pat tomatoes dry to avoid sogginess.
Use a lid to ensure even melting of the mozzarella.
