- Spread softened butter on one side of each sourdough slice. These will be the outsides of the sandwich.
- Flip slices over and spread basil pesto on the non-buttered sides. Add half the mozzarella to one slice.
- Place tomato slices over the cheese. Sprinkle with dried oregano and cracked black pepper.
- Add the remaining mozzarella over the tomatoes and close the sandwich with the second sourdough slice, buttered side out.
Cooking
- Place in a skillet over medium-low heat. Cover with a lid for 2-3 minutes until cheese starts to melt.
- Flip the sandwich and grill uncovered for 2-3 more minutes until the crust is golden-brown and charred.
Notes
Pat tomatoes dry to avoid sogginess.
