Prepare the Dough
- In a stand mixer, cream the butter, peanut butter, brown sugar, and white sugar for 3 minutes until light and fluffy.
- Incorporate the egg, egg yolk, and vanilla extract. Beat for 1 minute until well combined.
- Whisk flour, baking soda, and salt. Slowly add to the wet ingredients on low speed until just combined.
- Fold in the chopped Reese's Cups, Reese's Pieces, and chocolate chunks by hand, reserving some for the tops.
Chill and Bake
- Scoop 3-tablespoon balls of dough and refrigerate for 30-60 minutes to prevent over-spreading.
- Preheat oven to 350°F (175°C). Bake for 10-12 minutes until edges are golden but centers are soft.
- Immediately press extra candies into the warm cookies. Cool on the pan for 10 minutes before moving to a wire rack.
